Hi-- Mac OS Monterey. Qcad pro 3.26.2
When making an assembly drawing ----- by dragging individual drawings of parts into the assembly drawing--Can I make each part a different colour--I have tried with new layers but with no success.

Putting the inserted drawings on separate layers seems like the best way to go.
Note that if you drag drawing files into your drawing area, a block is created in the process. Changing the layer of the resulting block reference will not change the layer of the entities in the block. To do that, you'd have to edit the block (double click on it), select all and change the layer in the property editor, then Block > Return to Main Drawing.
