I have to reset the label colors for measurements every time I reopen a drawing. I change it in Drawing Preverences / label color, but it changes when I reopen the file. I always select the color black so I can see it on the monitor, but when I reopen the file, it is set to custom... what gives? How do I make it permanent?

Unfortunately I can't reproduce the issue with the QCAD Version: 3.27.1.0. nor the current version.
Changed label color below Drawing Preferences / Dimension Settings / Label color
I set your custom color to cyan, saved and reloaded the drawing. Label color was correctly saved and reloaded ...

Selecting 'Black' reverts to 'Custom'.
If you go 1 lower in the color drop-box and click on 'Others ...' I can see it is #4c0000 ... A kind of dark red.

- Reported is that black is saved as #00004c (dark blue)
My system/installation saves black as #4c000 (dark red)

Cyan doesn't has that problem ...
Probably the RGB color code math has some bug in it.
Remark that QCAD relies on OpenDesign libraries to open/save/import ...
Work around: Use By Layer and let the dimension layer handle the properties as intended.
'White' as advised by Andrew works too in this case.
