I would like to see a new tool or have another option in the 'Lengthen/Shorten' tool to be able to select a line/entity and extend one end to meet another entity or snap point.

Trim tools are generally intended for this: shorten or extend an entity to meet another ("limiting") entity.

You can drag and drop the end point of a line while holding down the shift key to extend / shorten a line to a given point.
