One more thing worth mentioning. The unreadable pdf is 142.4 kb in size while the readable pdf is 38.6 kb. so in a moment of desperation I tried to open the "unreadable" file with a postscript reader and it opened just fine. So to summarise I think its a printer set up issue with "print to file" -in other words you need to set a default printer to use with print to file, either your standard printer or a PDF printer (cups etc.).
